    Ingredients

  • Green gram dal(moong)
    - 1 cup
  • Turmeric powder
    - pinch
  • Cummin(jeera)seeds
    - 1 teaspoon
  • Coconut scrapings
    - 1/4 cup
  • Green chilles
    - 2
  • Slice ash gourd(thin and tender)
    - 1
  • Green peas
    - 50 gm
  • Beans
    - 50 gm
  • Drumsticks
    - 2
  • Vegetable marrow(chou-chou)
    - 1
  • Green tomato
    - 1
  • Carrot
    - 1
  • Potato
    - 1
  • Black gram dal
    - 1/4 teaspoon
  • Mustard seeds
    - 1/2 teaspoon
  • Coriander leaves
    - 1/2 bunch
  • Water
    - 1 cup
  • Ghee for seasoning
    - 1 tablespoon
  • Lime
    - 1
  • Salt
    - to taste

    Method

  1. Wash the vegetables-potato,carrot,tomato,marrow,drumstick,peas and beans well.
  2. Cut all the vegetables to an uniform size.
  3. Pour one cup of water in a vessel.
  4. Wash,pick the green gram dal and add to the water.
  5. Boil.when the dal is half boiled and tender,add all the sliced vegetables.
  6. Add salt and turmeric powder.
  7. Grind the coconut gratings,green chillies and cummin seeds to a fine paste.
  8. When the boiling vegetables are soft and tender,add the ground paste.
  9. Boil for a few minutes.remove from fire.
  10. Heat ghee in a pan,add mustard seeds and when they splutter,add black gram dal and a handful of curryleaves.
  11. Garnish the mixed vegetables kootu.
  12. Just before serving,squeez the juice of the lime.
  13. Mix well and serve with parathas or chappattis.
