Discription

    Ingredients

  • Ghee
    - 60 ml
  • Onions(Medium Size chopped)
    - 1
  • Garlic cloves(chopped)
    - 2-3
  • Green cardamoms
    - 6
  • Stick cinamon
    - 2.5 cm
  • whole cloves
    - 4
  • Ground ginger
    - 10 ml
  • Green chilles
    - 2
  • boneless pork
    - 900 g
  • Lemon juice
    - 1 Large
  • Lemon rind
    - 1 piece
  • Orange rind
    - 1 piece
  • Salt
    - 1 teaspoon
  • Coriander leaves(chopped)
    - 30 ml

    Method

  1. Heat the ghee in a heavy-based saucepan.
  2. Add the onions,garlic and ginger and fry gently for 5 minutes until soft and lightly colored.
  3. Meanwhile,grind the cardamoms,cinnamon and cloves in a small electric mill.
  4. Add ground spices to the onion mixture with ginger and chillies.
  5. Fry for 2 minutes,stirring constantly.
  6. Add pork to the pan in batches and fry over moderate heat until well browned on all sides.
  7. Add the lemon juice and lemon and orange rinds,with the salt.
  8. Stir well,add about 300 ml water to just cover the meat and bring to the boil.
  9. Lower the heat,cover and simmer gently stirring occasinally,for about 1 1/2 hours.
  10. Remove the lemon and orange rinds before serving.
  11. stir coriander leaves.
  12. Serve hot.
