Chicken Cooked in coconut milk

    Ingredients

  • Oil or ghee
    - 4 tablespoon
  • Chicken pieces
    - 8 or 10
  • Onions(Medium Size chopped)
    - 2
  • Garlic cloves(chopped)
    - 4
  • Ginger pieces(chopped)
    - 4-5 cm
  • Red chillies
    - 3
  • whole cloves
    - 4
  • Stick cinamon,crushed lightly
    - 2.5 cm
  • Fenugreek seeds
    - 5 ml
  • Coriander seeds
    - 10 ml
  • Cummin seeds
    - 10 ml
  • Lime juice
    - 75 ml
  • Coconut milk
    - 600 ml
  • Curry leaves
    - 2
  • Salt
    - to taste
  • Sesame seeds
    - 1 tablespoon

    Method

  1. Heat ghee in a deep frying pan.
  2. Add chicken pieces and fry until golden brown.
  3. Remove the chicken to a plate with slotted spoon and set aside.
  4. Put the onions in a blender with thye garlic,ginger,chillies,cloves,cinnamon,fenugreek,coriander,cummin and lime juice.
  5. Work until smooth,adding a little water if necessary.
  6. Add this mixture to the frying pan,
  7. Fry gently,stirring all the time,for 5 minutes until the paste turns a golden brown.
  8. Add the coconut milk,the curry leaves and salt.stir well,then return the chicken pieces to the frying pan.
  9. Bring to the boil,then lower the heat,cover and simmer for about 50 minutes.
  10. Transfer the chicken and sauce to a warmed serving dish and sprinkle with the sesame seeds and chopped coriander leaves.
  11. Garnish with the lime wedges and serve hot.
