    Ingredients

  • Cummin seeds
    - 1 teaspoon
  • Green chillies
    - 4
  • Coconut grated
    - 1/2 lid
  • Sour curd
    - 1/4 litter
  • Yam
    - 1 small piece
  • White pumpkin
    - 1 piece
  • Cluster beans
    - 100 gm
  • French beans
    - 100 gm
  • Green peas
    - 50 gm
  • Brinjals
    - 2
  • Drumsticks
    - 2
  • Raw bananas
    - 2
  • Carrots
    - 2
  • Potatoes
    - 2
  • Turmeric powder
    - 1 teaspoon
  • Curry leaves
    - 1 spring
  • Salt
    - To taste
  • Coconut oil
    - For tempering

    Method

  1. Wash and cut vegetables-brinjals,raw bananas,carrots and drum stick into 2 inch pieces.
  2. Cut the potatoes and yam separately.
  3. Shell peas.chop the beans,pumpkin to pieces of similar length.
  4. In a vessel,add water and boil the vegetables putting the ones first in to the hot water that take longer to boil.
  5. Add a pinch of turmeric powder.
  6. When the vegetables are half boiled,add salt.
  7. Grate coconut and grind it with slit green chillies and cummin seeds to a fine paste.
  8. Mix it with the sour curd.
  9. Add ground paste and the curd to boiled vegetables.
  10. Stir the vegetables evenly.
  11. Simmer on a slow fire for a few minutes.
  12. Remove from fire.
  13. Temper it with pinched curry leaves and mustard seeds.
  14. Usually coconut oil is heated a little,and poured onto the aviyal.
